Homemade Banana Muffins (in 30 minutes)
All you need is a few basic ingredients and about 3 ripe bananas to create these homemade banana muffins.
1-1/2 cups (375 mL) all-purpose flour
1 tsp (5 mL) baking soda
1 tsp (5 mL) baking powder
1/4 tsp (1 mL) salt
1 cup (250 mL) mashed ripe bananas, about 3 bananas
1/3 cup (75 mL) vegetable oil
1/2 cup (125 mL) granulated sugar
1 egg, well beaten
1 tsp (5 mL) vanilla
1. Preheat oven to 375°F (190°C). Line a muffin pan with Culinary Parchment Large Baking Cups.
2. In bowl, combine flour, soda, powder and salt.
3. In large bowl, mash bananas. Add oil and sugar and beat until well mixed. Add egg and vanilla and beat until smooth. Stir dry mixture into banana mixture just until blended.
4. Scoop or spoon batter into baking cups. Bake 18 to 20 minutes or until toothpick inserted in centre comes out clean. Cool pan on wire rack 5 minutes. Remove muffins from pan to cool completely.
Makes 12 muffins.
