Parchment paper is an indispensable utensil of the everyday gourmet. The Basics:

Parchment paper is perhaps best known for its use in the classic French “en papillote” style, which allows the meats, vegetables and herbs of a dish to cook together in folded parchment paper creating unparalleled flavor and richness.

Cooking En Papillote:

In the culinary arts, the term en papillote refers to a moist-heat cooking method where the food is enclosed in a packet of parchment paper or foil and then cooked in the oven. Delicate foods such as chicken breast or fish may be cooked en papillote as they can be quickly cooked by this steaming method.

Will it burn in the oven?
